You will need to squeeze out his juice. Take an oyster and turn it upside down. Take half a lemon and pour it over the oyster. As shellfish react to acid, the oyster will begin to open before your very eyes. It may take a few minutes, but if it opens, then it is fresh and can be eaten without risk to health.
