When changing kitchen appliances, lovers of the classic approach to making coffee may face a completely unusual problem. Induction hobs, replacing traditional electrical equipment, are adapted only for the use of cookware, the bottom of which is ferromagnetic. Are regular turks suitable for induction hobs? Can I continue brewing coffee in the traditional way, even after installing the innovative hob? Which cezve is suitable for induction?

Principle of operation

It is worth understanding all these issues even if the stove has already been purchased, and when such an acquisition is only planned. In some cases, you will have to revise the parameters of the usual container for brewing coffee or find a replacement for it. In any case, you should think about your own comfort in advance so as not to be left without your favorite drink after installing the induction hob.

Induction hobs are a relatively new solution that allows you to heat dishes without heating the surface of the burner itself. Interaction with the bottom of a saucepan, frying pan, kettle or other object occurs through the formation of a magnetic field, where an electric current is generated. A coil located under a tempered glass or glass-ceramic protective screen acts as a transducer.

In the process of induction, particles - electrons - are accelerated, leading to the release of a large amount of thermal energy. Objects on the stove are heated, boiling, evaporation and all other processes accompanying food preparation occur.For the successful use of the cookware, the alloy from which it is made must contain ferromagnetic particles. In addition, the cooker only reacts to objects of sufficient size.

So, the bottom area of ​​the Turks must be at least 70% of the size of the burner, otherwise the electrical appliance will simply not work.

Cooking difficulties

Coffee is a special drink that requires gradual and slow heating during the brewing process. Not all stoves are ready to work in this mode. Induction heating uses a pulsed current to heat fluids faster. To avoid problems, it is worth paying attention to special ferromagnetic discs that are placed on the panel and allow the size of even a small turk to be adapted to any type of burner. Thanks to the additional layer, you don't have to worry about overheating the drink inside - the heat will be distributed more evenly.

If you don't have an adapter, you can do without it. To do this, the cezve will have to be lifted above the hotplate at the moment when the coffee begins to rise. Holding it at a height of about 0.5 mm, you will have to wait for the foam to fall off. It should be added that the level of heat corresponding to heating is set in the range from 1 to 4 divisions on the control panel.

Heating features

Induction hobs are designed for several operating modes. At a power of no more than 50%, heating occurs in a pulsed mode, as during heating, that is, the current under the bottom is not constantly present. It is impossible to brew coffee correctly under such conditions - the taste of the drink is fully revealed only when the temperature rises evenly and smoothly. It is provided in induction cookers at a power of 70-80%.

What to do if, with strong heating, the foam begins to tend to the outside of the Turk? Of course, you can temporarily remove the container from the fire. But it will be much easier to simply change the power of the stove, reducing it to the 50% mark. With such indicators, the first foam will fall off, you will need to wait for its second increase. After that, the turk is removed from the stove, left for 30 seconds to fully saturate with the taste and aroma of ground roasted coffee beans, essential oils also do not have time to evaporate in such a short time.

Features of Copper Turks and Other Types of Jazz

Which cezve will allow you to prepare delicious and invigorating coffee on an induction hob? To determine the suitability of a Turk, it is enough to attach a magnet to its bottom. If the metal is attracted, the cookware is suitable for induction. In other cases, you will have to purchase a new cezve for the coffee. Definitely not suitable for use in combination with induction hobs:

  • copper turk - it does not have the necessary properties;
  • ceramic - new generation plates are not adapted for non-metallic dishes;
  • aluminum - strictly speaking, this metal has paramagnetic properties, but they are not enough to create a field.

    Steel is definitely a ferromagnetic alloy - it is from it that the entire structure or its bottom must be made in order to provide the necessary heating.

    But you can indulge in the pleasure of using familiar dishes, including earthen and ceramic Turks. It is enough to stock up on an adapter of the required diameter made of a ferromagnetic alloy. As a rule, on a four-burner hob, it corresponds to a heating field with a diameter of 12-14 cm.

    Turks selection rules

    If you decide to purchase a special Turk for an induction cooker, it is worth considering a number of very important points that allow you to conveniently use the dishes in everyday life. Cezve for coffee should be:

    • equipped with a safe handle for easy and quick lifting of the container from the panel;
    • volume from 150 to 500 ml;
    • with a bottom diameter of about 12 cm, but not less than 8 cm, otherwise heating will not occur.

      Of course, the ability to brew a flavored drink without any conventions and adapters looks pretty attractive. But there are some subtleties here.So, solid steel models are mainly sold with a non-stick coating or in a stainless steel version. This option does not have a very positive effect on taste. In addition, due to its characteristics, steel is not well suited for creating regular jazz with a narrow neck.

      The wide mouth prevents the formation of the correct foam, which prevents the evaporation of essential oils. As a result, the taste properties of the drink are far from ideal. In addition, coffee escapes from steel containers much faster and more often. A copper turk with a thick steel bottom can be a compromise solution.

      Which brand do you prefer?

      Among the brands that produce special cookware for induction hobs, there are those that provide the possibility of brewing coffee on modern hobs. In this case, individual versions of jas or whole sets are made from multilayer ferromagnetic alloys or ordinary steel. Such brands can be noted among the market leaders.

      1. Tima. Despite some complaints, this company is the only one that takes into account the characteristics of the drink. Its Turks are made of copper, but supplemented with a ferromagnetic bottom. The choice of models and volumes is small, but the cezve has the correct shape that retains the taste of coffee.
      2. Gipfel. The company is quite famous, in its arsenal there are polished steel cezves with a wide neck. The range of volumes is 350 and 500 ml, it is simply impractical to purchase large sizes.
      3. Errigen. A company dedicated to the ergonomics of cookware with a comfortable handle. Otherwise, these are classic stainless steel turks with a wide neck.
      4. Korkmaz. The manufacturer produces sets containing both a miniature version of a 20 ml cezve and larger versions of 300 and 400 ml.

      Should you compromise?

      It should be said right away that both the Turkish coffee makers, created specifically for induction cookers, and the adapter discs are very expensive. But there is one important nuance: once you select the plate on the stove, it can be used with different types of coffee makers. Your favorite cezve or the collected collection does not have to be transferred to the category of decor items in the interior. The cookware will continue to serve its intended purpose and allow the traditional coffee recipes to be applied.

      Besides, the adapters have another advantage - you can combine non-metallic versions of the Turks with them, including ceramic, allowing you to fully reveal the entire flavor range of the drink.

      The rock quartz cezves popular today will also be quite appropriate and convenient.

      For those new to making coffee on an induction hob, a copper turk with a high narrow neck would be the best choice; you can even find an option with a bottom made of a ferromagnetic alloy and not worry about the integrity of the glass-ceramic coating of the hob.
